Keep sales and stock movements explainable
Premium bottles, mixers and cocktail ingredients need a consistent inventory record. Set the sale and stock units before launch so one bottle sold is not confused with one serving poured.
For bottle service, map each charge and consumed item to the menu and inventory setup. Demonstrate substitutions and complimentary items with the agreed permissions. Record breakage and wastage explicitly instead of hiding them in unexplained stock corrections.

Cashier and management control
Close the night with evidence for every difference
Keep the order total, amount paid and outstanding balance distinct. A payment reference or transfer screenshot needs the agreed verification process; recording a tender is not the same as confirming bank settlement.
Configure who can adjust orders, record refunds and approve exceptions. During your demo, ask an ordinary staff account to attempt a restricted action, then show the authorised workflow and its retained record. Review unresolved payments and stock differences with a named owner before handing over the shift.
